Equipment
Ingredients
Noodles
- 8 oz Rice Noodles wide rice noodles preferred
Protein
- 6 oz Chicken thigh or flank steak thinly sliced
Stir-Fry Components
- 2 cloves Garlic minced
- 2 large Eggs
- 1 1/2 tbsp Soy Sauce light soy sauce
- 1 tbsp Soy Sauce dark soy sauce
- 1/2 tsp Sugar
- 2 cups Broccolini or napa cabbage cut into bite-size pieces
- Neutral Oil for cooking
- 2 cups Water
Instructions
Soak rice noodles
- Soak the rice noodles in tap-hot water for ~10 minutes.
Stir fry
- Heat a large skillet or wok over high heat with a thin layer of oil.
- Add the chicken sear quickly until just cooked.

- Push the chicken to the side, crack in the eggs, and gently scramble until just set.
- Add the cabbage and toss over high heat until the vegetables are just tender.
- Pour in the garlic, light soy sauce, dark soy sauce, and sugar.

Add noodles
- Drain the rice noodles, then add the noodles and 2 cups of water to the pan.
- Cook noodles until water is reduced to a glossy sauce and noodles are fully cooked. Keep some liquid in the pan as rice noodles will continue to soak up water.

Serve
- Plate immediately while hot.
