Lazy Pad See Ew

Authentic-style pad see ew made with wide rice noodles, soy sauces, egg, and tender protein, stir-fried hot and fast for glossy noodles without sogginess.

Ingredients

Noodles

Protein

  • 6 oz Chicken thigh or flank steak thinly sliced

Stir-Fry Components

  • 2 cloves Garlic minced
  • 2 large Eggs
  • 1 1/2 tbsp Soy Sauce light soy sauce
  • 1 tbsp Soy Sauce dark soy sauce
  • 1/2 tsp Sugar
  • 2 cups Broccolini or napa cabbage cut into bite-size pieces
  • Neutral Oil for cooking
  • 2 cups Water

Instructions

Soak rice noodles

  • Soak the rice noodles in tap-hot water for ~10 minutes.

Stir fry

  • Heat a large skillet or wok over high heat with a thin layer of oil.
  • Add the chicken sear quickly until just cooked.
  • Push the chicken to the side, crack in the eggs, and gently scramble until just set.
  • Add the cabbage and toss over high heat until the vegetables are just tender.
  • Pour in the garlic, light soy sauce, dark soy sauce, and sugar.

Add noodles

  • Drain the rice noodles, then add the noodles and 2 cups of water to the pan.
  • Cook noodles until water is reduced to a glossy sauce and noodles are fully cooked. Keep some liquid in the pan as rice noodles will continue to soak up water.

Serve

  • Plate immediately while hot.

    How much water are you adding? This sounds great but I think I’m going to have to improvise and precook the noodles 🤷‍♀️

      I recommend two cups to cook the noodles. I don’t recommend pre-cooking as it can break your noodles quickly

    Doesn’t say anything about how much water?

    Step 1 also says “Drain very well and set aside.” – what is this referring to?

      Thanks for your question – I updated the recipe to add more clarity.

      For soaking, you want to add enough water to fully submerge/cover the noodles. When cooking, I recommend two cups, but you can also add one cup at a time until fully cooked and reduced.

    Recipe says add water with the noodles, but i don’t see how much?

      When soaking the rice noodles in the beginning, any amount will work, so as long as it’s fully covered. When cooking, I recommend two cups, but you can also add one cup at a time until your noodles are fully cooked.

    Why do you keep saying “wide” roce noodles and using the skinny ones?

      Thanks for the question! For this recipe I’d recommend either medium (pad thai style, linked) or wide rice noodles. In the pictures I’m using medium sized rice noodles. Just clarified this in the recipe.
