Authentic-style pad see ew made with wide rice noodles, soy sauces, egg, and tender protein, stir-fried hot and fast for glossy noodles without sogginess.

Ingredients

Noodles

Protein

  • 6 oz Chicken thigh or flank steak thinly sliced

Stir-Fry Components

  • 2 cloves Garlic minced
  • 2 large Eggs
  • 1 1/2 tbsp Soy Sauce light soy sauce
  • 1 tbsp Soy Sauce dark soy sauce
  • 1/2 tsp Sugar
  • 2 cups Broccolini or napa cabbage cut into bite-size pieces
  • Neutral Oil for cooking
  • 2 cups Water

Instructions

Soak rice noodles

  • Soak the rice noodles in tap-hot water for ~10 minutes.

Stir fry

  • Heat a large skillet or wok over high heat with a thin layer of oil.
  • Add the chicken sear quickly until just cooked.
  • Push the chicken to the side, crack in the eggs, and gently scramble until just set.
  • Add the cabbage and toss over high heat until the vegetables are just tender.
  • Pour in the garlic, light soy sauce, dark soy sauce, and sugar.

Add noodles

  • Drain the rice noodles, then add the noodles and 2 cups of water to the pan.
  • Cook noodles until water is reduced to a glossy sauce and noodles are fully cooked. Keep some liquid in the pan as rice noodles will continue to soak up water.

Serve

  • Plate immediately while hot.
