Noodles
- 8 oz Wheat noodles
Curry Sauce
- 2 tbsp Neutral oil
- 1 tbsp Thai green curry paste
- 2 Garlic cloves minced
- 2.5 tbsp Peanut butter
- 1.5 tbsp Soy sauce
- 1.5 tsp Sugar
- ¼–⅓ cup Chicken stock or water or light stock
- 1.5 tsp Lime juice
Protein (Optional)
- 8 oz Chicken sliced
Garnish
- Scallions or Thai basil sliced
Instructions
Cook the Noodles
- Cook noodles until just tender. Drain and set aside.
Build the Sauce
- Heat oil in a pan over medium heat. Add green curry paste and garlic. Cook 30–60 seconds until fragrant.

- Stir in peanut butter, soy sauce, sugar, and chicken stock. Whisk until smooth and gently simmering.

Add Protein (Optional)
- Add chicken and Thai basil. Cook until just warmed through.

Finish & Build
- Add noodles and toss until evenly coated and creamy.

- Remove from heat. Finish with lime juice.
- Garnish with more Thai basil (optional) and serve immediately.
