Instructions
Cook the Noodles
Cook noodles until just tender. Drain and set aside.
Build the Sauce
Heat oil in a pan over medium heat. Add green curry paste and garlic. Cook 30–60 seconds until fragrant.
Stir in peanut butter, soy sauce, sugar, and chicken stock. Whisk until smooth and gently simmering.
Add Protein (Optional)
Add chicken and Thai basil. Cook until just warmed through.
Finish & Build
Add noodles and toss until evenly coated and creamy.
Remove from heat. Finish with lime juice.
Garnish with more Thai basil (optional) and serve immediately.
