Prepare and Roast the Carrots

  • Cut carrot into long ribbons by using a vegetable peeler.
  • Toss carrot ribbons with olive oil and salt.
  • Roast at 425°F for 12-15 minutes until tender and slightly caramelized. Be sure to toss the carrots half way to ensure even cooking.

Make the Glaze

  • Warm soy sauce, maple syrup, and butter together in a small pan.

Finish

  • Toss roasted carrots in the glaze.
  • Finish with chili flakes, sesame seeds, and scallions.
