Instructions
Cook the Egg (Optional)
Bring a small pot of water to a boil. Gently lower in the egg and cook for 6½–7 minutes.
Transfer to cold water, peel, and set aside.
Sear the Toppings
Heat a skillet over medium heat and pan-sear dumplings until golden and cooked through. Remove and set aside.
In the same pan, brown sausage slices, then grill Spam until crisp. Set aside.
Build the Broth
In a saucepan, heat neutral oil over medium heat. Add gochugaru and gochujang and cook 10–15 seconds until fragrant.
Stir in garlic powder, onion powder, sugar, soy sauce, fish sauce, sesame oil, chili crisp, ramen seasoning packets, and water.
Bring to a gentle simmer.
Cook the Noodles
Add ramen noodles directly to the broth and cook until just tender, about 2–3 minutes.
Add bok choy and cook for 1 minute.
Assemble
Transfer noodles and broth to a bowl.
Top with halved egg, dumplings, sausage, Spam, and scallions.
