Instructions
Build the Aromatic Oil
Heat a large skillet over medium-high heat.
Add neutral oil, ginger, garlic, green onions, soy sauce, fish sauce, sugar, and sesame oil.
Cook for 30–45 seconds until fragrant but not browned.
Cook the Noodles
Add chicken stock and egg noodles to the pan.
Boil until the noodles are just al dente.
Finish
Add the shredded chicken to the pan.
Toss continuously until the sauce reduces and coats everything in a glossy sheen.
Season with salt to taste and finish with additional green onion greens if desired.
Notes
Egg noodles work best, but any noodle can be used. Because noodles vary in absorption, adjust salt and liquid as needed.
Keep the heat moderate to preserve the fresh ginger–scallion aroma.
