Ingredients

  • 2 Cucumber large
  • 2 tbsp Lime juice
  • 1 tsp Fish Sauce
  • 1 tsp Honey
  • 1 tsp Rice vinegar
  • 1/2 tsp Chili flakes or to taste
  • 1/2 tsp Sesame oil toasted
  • 1/4 tsp Salt
  • 1/4 cup Cilantro fresh, chopped
  • 2 tbsp Fresh mint chopped
  • 2 tbsp Crushed peanuts roasted
  • 2 tbsp Red Onion thinly sliced, optional

Instructions

Prepare the cucumbers

  • Slice the cucumbers thinly into rounds using a mandolin if available. If using thicker cucumbers, you can halve them lengthwise first.

Make the dressing

  • In a large bowl, whisk together lime juice, fish sauce, honey, rice vinegar, chili flakes, and sesame oil.
  • Taste and adjust seasoning if needed.

Toss the salad

  • Add cucumbers to the mixing bowl along with cilantro, mint, crushed peanuts, and red onion if using.
  • Pour the dressing over the top and toss until everything is well coated.

Finish and serve

  • Let the salad sit for about 5 minutes so the cucumbers absorb the dressing.
  • Serve chilled or at room temperature.
