Instructions
Prepare the cucumbers
Slice the cucumbers thinly into rounds using a mandolin if available. If using thicker cucumbers, you can halve them lengthwise first.
Make the dressing
In a large bowl, whisk together lime juice, fish sauce, honey, rice vinegar, chili flakes, and sesame oil.
Taste and adjust seasoning if needed.
Toss the salad
Add cucumbers to the mixing bowl along with cilantro, mint, crushed peanuts, and red onion if using.
Pour the dressing over the top and toss until everything is well coated.
Finish and serve
Let the salad sit for about 5 minutes so the cucumbers absorb the dressing.
Serve chilled or at room temperature.
